Late winter evening. As you walk the alleys of Allahabad market, suddenly a sweet smell of caramel, seductive with sugary notes and comforting with a fragrance of warm milk veils you. Following your nose you come to a stall, which sells nothing but the carrot halva. Accidental green lamp lights the two main stars: red and black carrot pudding. Your taste buds open... It's almost like toffee, little curds play on your tongue, teasing you with aromatic sweetness. Your pupils widen. Is this really made of carrot? And then you don't care, indulging with another spoon of this heavenly earthy and natural dessert. The smile on your face is the one to last.

Gajar ka halwa, also known as gajorer halua, Gajrela, Gajar Pak, and Carrot halwa is a carrot-based sweet dessert pudding from the Indian subcontinent. It is made by placing grated carrots in a pot containing a specific amount of water, milk and sugar and then cooking while stirring regularly. It is often served with a garnish of almonds and pistachios. The nuts and other items used are first sautéed in ghee, a type of clarified butter from the Indian subcontinent.
